Thai parboiled rice is produced by hydrothermally treating paddy rice—commonly through soaking, steaming and drying—before the husk is removed and the grain is milled. This is different from ordinary white-rice milling and different from instant or pre-cooked rice.
The process changes the grain structure and commonly gives the rice a firmer cooked texture, better grain separation and a cream-to-pale-golden color. Those characteristics make it relevant to catering, institutional kitchens, prepared meals and markets that prefer non-sticky, resilient grains.
